Vinification :
2011 harvest. Alcoholic and malolactic fermentation in heat-regulated stainless steel tanks. Manual and traditional riddling of racks.
Varietal :
Chardonnay (100%), including 50% reserve wines from 2010 harvest.
6 years' aging.
Dosage :
4 grams sugar per liter.

Tasting notes :
This champagne has the colour of white gold dotted with green reflections and topped with a slender ring of foam. Delicate and generous with notes of toast, butter and flaky pastry, this Blanc de Blancs has reached full maturity and is not afraid to show it. The palate is fresh and generous, with notes of citrus (lemon, grapefruit). Subtle secondary fermentation gives this Blanc de Blancs champagne an incisive elegance. It is ideal with sushi, crab salad or flaky pastry nibbles and salmon.
