2012 harvest. Alcoholic and malolactic fermentation in heat-regulated stainless steel tanks. Manual and traditional riddling of racks.
Varietal :
Chardonnay (100%), including 50% reserve wines from 2011 harvest.
5 years' aging.
Dosage :
10 grams sugar per liter.

Tasting notes :
This elegant, subtle champagne produces beautiful white froth over a delicate pale golden robe. The dominant note is one of preserved citrus fruits (lemon, grapefruit), juicy mango and sophisticated pastries. The palate is elegant and incisive, reflecting a well-balanced secondary fermentation that produces wine with excellent length. This well-structured, elegant Blanc de Blancs is an excellent accompaniment for grilled fish with thyme, burbot with citrus fruit, grilled chicken or a Parma ham salad.
