Beneath the discreet but long-lasting froth, the salmon pink robe of this rosé champagne reveals a beautiful ring of white bubbles. This is an elegant, expressive champagne with notes of red berry fruits, a hint of fresh blackcurrant and a suggestion of morello cherries in brandy. It is wonderfully fresh and aromatic on the palate, with a subtle balance created by skilful secondary fermentation. Overall, there is a note of preserved black fruits heightened by a touch of mocha. The final palate is both invigorating and smooth. This subtle, full-bodied pink champagne is ideal with a fillet of pike-perch, a summer fruit salad or French toast made with biscuits roses de Reims.
