Grande Montagne de Reims : Chigny-les-Roses, Ludes, Rilly-la-Montagne, Taissy, Cormontreuil. Average age of vines : 35 years.
Vinification :
2013 harvest. Alcoholic and malolactic fermentation in heat-regulated stainless steel tanks. Manual and traditional riddling of racks.
Varietal :
Chardonnay (40%), Pinot Noir (30%), Pinot Meunier (30%), including 50% reserve wines from 2011 and 2012 harvests.
4 years' aging.
Dosage :
10 grams sugar per liter.

Tasting notes :
Producing a lush, long-lasting froth, this pale golden champagne has an expressive, generous aroma with notes of white fruits (apples/pears), fresh grapes and a touch of exoticism (lychee, mango). The primary aroma is soft, concealing a well-structured wine that has the length characteristic of the very best champagnes. The bouquet is clearly mineral. This is the ideal champagne to serve with stuffed quail or a pineapple gazpacho.
