Terroirs : Grande Montagne de Reims : Chigny-les-Roses, Ludes, Rilly-la-Montagne, Taissy, Cormontreuil.  Average age of vines : 35 years.

Vinification : 2011 harvest. Alcoholic and malolactic fermentation in heat-regulated stainless steel tanks. Manual and traditional riddling of racks.

Varietal : Chardonnay (55%), Pinot Noir (45%), 

 

7 years' aging.

Dosage : 9 grams sugar per liter.

Tasting notes  : The lush, creamy froth on this vintage champagne melts away to form a delightful ring of foam above a beautiful golden yellow liquid, a reminder of the wine’s maturity. The aroma is rich and complex, combining preserved white fruits (apples/ pears) and yellow fruits (apricots). The inclusion of Chardonnay in the blend introduces a subtle suggestion of spices, toast and honey. The champagne is fresh and well-structured, with maturity and opulence. It is rich and full-bodied with a final incisive note that gives it plenty of length. This vintage champagne is an excellent accompaniment to guinea fowl with grapes or a poultry supreme with three types of citrus fruit. The ideal dessert is a pear and almond tart.
